Ghar par ekdum khasta aur raseeli Mawa Gujiya banane ki perfect recipe ye rahi. Iska raaz iske Maun (Moyen) aur Dheemi aanch par talne mein hai.
Samaagri (Ingredients)
Outer Layer (Covering) ke liye:
Maida: 2 cup
Ghee: 1/4 cup (Moyen ke liye - isse gujiya khasta banti hai)
Pani: Thoda sa (sakht aata goondhne ke liye)
Filling (Masala) ke liye:
Mawa (Khoya): 1 cup (200g)
Chini: 1/2 cup (pisi hui)
Dry Fruits: Kaju, Badam, Kishmish (barik kate huye)
Flavor: 1/2 tsp Elaichi powder aur thoda sa Sukha Nariyal (kaddukas kiya hua)
Suji: 2 tbsp (Optional - agar mawa geela ho toh)
Banane ki Vidhi (Step-by-Step)
Aata Goondhein: Maida mein ghee milayein aur haathon se tab tak malein jab tak maida mutthi mein bandhne na lage. Ab thoda-thoda pani daalkar ek sakht (tight) aata goondh lein. Ise 20 minute dhak kar rakh dein.
Filling Taiyar Karein: Ek kadhai mein mawa (khoya) ko halka gulabi hone tak bhun lein. Jab mawa thanda ho jaye, tab isme pisi hui chini, dry fruits, nariyal aur elaichi powder milayein. (Garam mawe mein chini na dalein, warna wo pani chhod dega).
Puri Belein: Aate ki chhoti-chhoti loiyan (balls) banayein aur unhe patla bel lein.
Shape Dein: Gujiya ke saanche (mold) par beli hui puri rakhein, beech mein 1-2 chammach filling bharein. Kinaro par thoda sa pani lagayein aur saanche ko zor se daba kar extra aata nikaal dein.
Frying (Sabse Zaroori): Tel ya ghee ko halka garam karein. Gujiya ko Dheemi aanch (Low Flame) par hi talein. Tej aanch par upar bubbles aa jayenge aur gujiya narm ho jayegi. Sunhara hone tak fry karein.
