Hey guys welcome back! Looking for a super soft, chewy mochi?
This cream cheese mochi is super light, chewy and absolutely delectable!
Coming together with just a few ingredients and a steamer, this mochi is pretty easy to make, and the results will blow you away!
It’s one of the most chewy mochi recipes i’ve tried out…! That being said please do USE GLOVES/HEAVILY FLOUR your surface as it will be very sticky (which is what makes it super chewy!)
You may be tempted to add a lot of cornstarch immediately, but please add as needed just enough to prevent it from being sticky- as if too much is added at one go, it may cause the mochi to become overly dry :(
Here’s the recipe i used:
120g glutinous rice flour
15g cornstarch
35g caster sugar
180ml milk
*Splash of vanilla essence (optional but highly recommended!)
For the filling (i just eyeballed it):
Cream cheese (room temperature, shouldn’t be rock hard!:
Whipping cream (cold)
Vanilla essence
Sugar
Some helpful tips to note:
*add the butter when the dough is still warm
*freeze and make the filling beforehand (for ease of assembling the mochi)
*sieve the mochi dough for extra fine dough (optional though!)
Keep in mind: i recommend freezing it for storage, then defrosting before consumption :)
