Ingredients (with US measurements):
hard-cooking potatoes, about 2 lbs (900 g)
beef stock, about 1 cup (240 ml)
apple cider vinegar, 2 tbsp (30 ml)
white wine vinegar, 2 tbsp (30 ml)
plain yellow mustard, 1 tbsp (15 g)
onion, 1 medium, finely chopped
vegetable oil, 3-4 tbsp (45-60 ml), plus more for finishing
salt, to taste
pepper, to taste
sugar, 1 tsp (5 g)
nutmeg, a pinch
optional: German beer for the cook! 🍺
Instructions:
Boil the potatoes until tender, peel, and slice them. Sauté the chopped onion in oil until soft but not browned. Deglaze with the vinegar mix and let it reduce for a few minutes. Add beef stock and mustard, simmer for 5 minutes. Season with salt, pepper, sugar, and nutmeg. Pour the hot marinade over the sliced potatoes and mix gently. Let it rest for 15-20 minutes so the potatoes soak up the flavors. Add more marinade, salt, or vinegar as needed. Finish with a generous splash of oil to make it creamy and give it that signature “chatting” sound. Serve and enjoy!
