Vegetables are very important when it comes to Diet. Boiled Veggies are best in terms on Nutrition, Weight Loss – but taking a bunch of veggies every day is essential and that can be any form. We believe that when you really like the food you eat; your body extracts more benefits out of it. Here we are coming up with a Delicious recipe – Vegetable Vindaloo – tasty and healthy! Have a look at the way it is being prepared and do let us know with your feedback!
Ingredients -
For Boiling:
Chopped Carrots - ¼ cup
Chopped Beans - ¼ cup
Cauliflower Florets - ¼ cup
Green Peas / Matar - ¼ cup
Diced Potatoes - 1 cup
Broccoli Florets - ¼ cup
For Spices Paste:
Mustard Seeds / Rai - ¼ tsp
Cumin Seeds / Jeera - ½ tsp
Fennel Seeds / Saumph - ¼ tsp
Black Pepper - 5 to 6 nos
Cardamom / Elaichi - 2 nos
Gram Flour / Besan - 1 tablespoon
Salt - ¼ tsp
Coriander Powder / Dhaniya - ½ tsp
Red Chilli Powder / Lal Mirchi - ½ tsp
Turmeric Powder / Haldi - ¼ tsp
Garam Masala - ¼ tsp
Water - 3 tsp
Other Ingredients:
Chopped Onions - ½ cup (square shaped cut)
Chopped Tomatoes - 1 cup
Water - 1 cup
Oil - 2 tablespoon
Asafetida / Hing - ¼ tsp
Green Chilli Paste - ¼ tsp
Ginger Paste - ½ tsp
Garlic Paste - ½ tsp
Red Chilli Powder / Lal Mirchi - ¼ tsp
Tomato Sauce - 5 tsp
Salt - ½ tsp
Method -
1. In a heating vessel, take good amount of Water and keep to boil.
2. In a mixing bowl, take any available veggies of like ¼ cup of chopped Carrots, ¼ cup of chopped Beans, ¼ cup of Cauliflower Florets, ¼ cup of Green Peas, 1 cup of diced Potatoes, ¼ cup of Broccoli Florets, wash all the veggies and add to the boiling Water to boil for 5 Min.
3. Then remove all the Vegetables from the boiling Water and drain off the Water with the help of sieve and keep aside.
4. In another heating pan, take ¼ tsp of Mustard Seeds (Rai), ½ tsp of Cumin Seeds (Jeera), ¼ tsp of Fennel Seeds (Saumph), 5 to 6 nos of Black Pepper, 2 nos of roughly crushed Cardamom and roast all the spices for 2 min.
5. Then take the roasted spices in a mixer grinder, remove the Cardamom covering and grind the spices into fine powder.
6. In small mixing bowl, take the grinded spices powder to that add 1 tablespoon of Gram Flour (Besan), ¼ tsp of Salt , ½ tsp of Coriander Powder, ½ tsp of Red Chilli Powder, ¼ tsp of Turmeric Powder, ¼ tsp of Garam Masala, 3 tsp of Water and make the paste of all the spices and keep aside.
7. In a cooking pan, add 2 tablespoon of Oil and allow it to heat nicely.
8. Then add ¼ tsp of Asafetida (Hing), 1 cup of square chopped Onions, ¼ tsp of Green Chilli Paste, ½ tsp of Ginger Paste, ½ tsp of Garlic paste and sauté for 3 to 5 Min or until color changes.
9. Then add the spices paste in cooking pan and sauté for another 1 Min.
10. Now add 1 cup of chopped Tomatoes into the pan and cook for 2 Min.
11. Then add ¼ tsp of Red Chilli Powder, all the boiled Vegetables and mix well.
12. Furthermore, add 5 tsp of Tomato Sauce, ½ tsp of Salt, 1 cup of Water and give a nice mix.
13. Cover the lid and simmer on low flame for 8 to 10 Min.
14. Vegetable Vindaloo is now ready, garnish with some fresh Coriander Leaves and serve with Rice or Chapati.
