Ingredients
FOR PREPARING MIRCHI FRY :
Green chilli / Hari mirchi - 2 Big sized
Salt - As per taste
Cumin seeds / Jeera - 1/4 Teaspoon
Clarified butter / Ghee - As required
Black salt / Kala namak - 1/4 Teaspoon
Chaat masala - As required
Roasted cumin seeds powder / Jeera powder - 1/2 Teaspoon
FOR PREPARING CORIANDER LACHHA PARATHA :
Whole wheat flour / Gehu ka aata - 1 Cup
Oil - 1 Teaspoon
Salt - As per taste
Water - As required
Clarified butter / Ghee - As required
Red chilli powder / Lal mirch powder - 1/4 Teaspoon
Coriander leaves / Hara dhaniya - A handful
Instructions
FOR PREPARING MIRCHI FRY :
1. Take washed green chilli. Make a vertical slit from top to the bottom and scoop out the seeds. Then fill salt and cumin seeds in the chilli using a spoon. Likewise, prepare another chilli.
2. Meanwhile, heat a tawa. Grease it with ghee. Place the prepared chillies on it. Sprinkle black salt, chaat masala, and roasted cumin seeds powder to it.
3. Roast it on medium to low flame for 3 to 4 minutes. Rotate it occasionally and press it to roast it evenly from all side.
4. Once done, turn off the flame. Take out it to the plate and cut it.
FOR PREPARING CORIANDER LACHHA PARATHA :
5. Take wheat flour in a bowl. Add 1 Teaspoon oil and salt. Mix well.
Add water gradually to prepare medium consistency dough. Grease the dough with ghee and knead it well.
6. Take a ball-sized dough, and dust it with flour. Prepare a paratha from it. Apply ghee on the paratha. Sprinkle salt, red chilli powder, and coriander leaves.
7. Fold the roti along its diameter. Now roll it over to make a round circle. Press it slightly.
8. Dust the prepared dough ball with flour and roll it to make a paratha.
9. Meanwhile, heat a tawa. Grease it with ghee. Place the paratha on it and cook it on one side.
10. Flip it, once it is slightly brown. Flip the paratha, after it is roasted well from one side.
11. Apply ghee on both sides and cook on a medium flame. Press the paratha while cooking to make it crispy. Once done, transfer it to a plate. Likewise, prepare another paratha.
