In her TEDx talk, Alejandra challenges us to avoid food waste by saving food scraps and upcycling them into something greater. With creativity, food waste can be transformed into a star on our plates—benefiting our health, wallets, and planet. Alejandra’s message is clear: by embracing the power of food waste, we can all contribute to a healthier future for ourselves and the Earth. Alejandra Schrader is an award-winning author, eco-chef, activist, and food TV personality. Alejandra advocates for sustainable food systems, biodiversity, and nutrition equality. She has spoken at prestigious venues like the United Nations and the World Bank. She holds a Master of Arts in Urban Planning from the University of Michigan with a focus on sustainability and a Certification in Plant-Based Nutrition from the T. Colin Campbell Center for Nutrition Studies at Cornell University. This talk was given at a TEDx event using the TED conference format but independently organized by a local community.
