Chicken Pot Pie with Sam Huntington!!

RECIPE: Sam’s Chicken Pot Pie

Ingredients:
4 stalks of celery
two large carrots
One large white onion
1 large Zucchini
Butter
Garlic
olive oil
1 rotisserie chicken
1 package of pie dough
flour
chicken stock
salt and pepper
frozen peas
chopped parsley
dry white wine
1 egg
Finishing salt (like Maldon salt.)

Directions:
Preheat oven to 375.
Dice the celery, carrots and onion and add to a mixing bowl. Mince garlic. Dice zucchini. Add olive oil and butter to a large sauce pan. Add Mirepoix mixture, salt and pepper and let slowly simmer.
Line a deep baking dish with the pie crusts. Peel pieces of chicken off of the rotisserie chicken. Add zucchini and peas to the saute pan.
Add chicken and parsley to sauce pan. Add 1/2 c of white wine to the sauce pan and stir to combine and deglaze.

To make the roux, heat chicken stock in a small pot. Gradually add a small amount of flour and whisk to combine, add more flour to thicken the sauce. Optional to add a dash of white wine.
Once thickened, add the roux to the sauce pan of vegetables and chicken, stir to combine. Taste and season with salt and pepper if needed.
Add the filling to the baking dish, use remaining pie crusts to cover pot pie and pinch the edges together.
Whisk an egg and use a pastry brush to paint the egg wash over the top of the crust. Finish with salt, like maldon or kosher salt.

Cover with tinfoil and bake for 45-50 mins. Remove tinfoil and let bake an additional 5-8 minutes to allow the top to become golden brown.
