Back to Brazil today to make Moqueca. I've seen this done in quite a few ways but from what I could find, layering the vegetables in like this and not really touching it as it cooks seems to be the most traditional way to do it in Brazil, which is great cause it makes the whole dish pretty hands off in terms of cooking.
You can use all fish if you want since I think it originally started as a fish stew but prawns and clams are too delicious to pass up. The broth that forms is made purely from the juices of the seafood so it's so tasty and perfect over some rice
