PERFECT SCRAMBLED EGGS
There's no need to add milk or beat for days.
canola oil
2 extra large eggs, quickly beaten (I use organic)
salt & pepper to taste
-Heat a wide bottom, nonstick pan over medium heat.
-Once hot, brush enough oil to lightly coat the pan.
-Pour in eggs and tilt the pan to form an egg pancake that covers the pan.
-Once the edges start to brown, turn off the heat. Use a rubber spatula to break up the eggs to cook any remaining runny egg pieces.
Serve immediately. Season with salt and pepper to taste.
GOAT CHEESE, PROSCIUTTO, AND MINT OMELETTE
2 eggs, beaten (I use organic)
1/2 ounce goat cheese, crumbled
1 large or 2 small slices prosciutto, sliced into thin strips
fresh mint, a few leaves, thinly sliced ribbons (add more on top if you like)
Pepper to taste (salt not necessary due to the saltiness in prosciutto)
The key is to have your ingredients prepped.
-Repeat steps 1-3 above
-Quickly Add goat cheese, prosciutto, and mint on top of the egg pancake between the center and side.

Repeat steps 1-3 from above recipe
-Reduce heat to low. The eggs are mostly cooked and now it's about warming the filling.
-Add goat cheese, prosciutto, and mint on the omelette between the center and the side of the pan closest to you.
-Jerk the pan towards you until the edge of the omelette is at the rim of the pan.
-Fold over with a spatula to a half moon. Cook for another minute until stuffing is hot and serve.
THE FOLD METHOD (AS SEEN IN VIDEO)
-Once the ingredients have been added, jerk and tilt the pan until the edges of the omelette reach the rim of the pan.
-Use a spatula to roll one time.
-Scooch to the center of the pan to complete your final roll and serve.
Don't trip if it tears or doesn't roll perfectly. They are very forgiving because you can adjust them on the plate.
