Ingredients:
For the Cake & Soak:
1 box (15.25 oz) German Chocolate or Dark Chocolate Cake Mix
Ingredients listed on box (eggs, oil, water)
1 can (14 oz) Sweetened Condensed Milk
1 cup Semi-Sweet Chocolate Chips
For the Coconut Pecan Frosting:
1 cup Evaporated Milk
1 cup Granulated Sugar
3 large Egg Yolks
½ cup (1 stick) Unsalted Butter
1 teaspoon Vanilla Extract
1 ½ cups Sweetened Shredded Coconut
1 cup Chopped Pecans
For the Topping:
½ cup Chocolate Fudge Sauce or Ganache (for drizzling)
Toasted coconut or extra pecans (optional garnish)
Instructions:
Bake Cake: Preheat oven to 350°F (175°C). Prepare the cake mix according to package directions for a 9x13 inch baking pan. Bake until a toothpick comes out clean (approx. 25-30 mins).
Poke: Remove cake from oven. While it is strictly hot, use the handle of a wooden spoon to poke large holes all over the cake, spacing them about an inch apart.
Make Soak: In a microwave-safe bowl, combine the sweetened condensed milk and the 1 cup of chocolate chips. Heat in 30-second intervals, stirring in between, until melted and smooth.
Infuse: Pour the warm chocolate mixture evenly over the hot cake. Use a spatula to spread it, pushing the delicious fudge into the holes. Let the cake cool completely.
Make Frosting: In a medium saucepan, whisk together the evaporated milk, sugar, and egg yolks. Add the butter. Cook over medium heat, stirring constantly, until the mixture thickens and bubbles (about 10-12 minutes).
Add Mix-ins: Remove from heat. Stir in the vanilla, shredded coconut, and chopped pecans. Let the frosting cool for about 15-20 minutes until it thickens to a spreadable consistency.
Spread: Spread the gooey coconut-pecan frosting evenly over the cooled chocolate cake.
Drizzle: Warm the fudge sauce or ganache slightly and drizzle it over the top of the cake.
Chill: Refrigerate the cake for at least 1 hour before slicing to allow everything to set.
