Easy Slow Cooker Thai Soup

This slow cooker Thai soup is an easy and comforting recipe to spice up your night. For the best results, opt for full-fat coconut milk.
Ingredients:
-- 3 lemongrass stalks, tough outer layers removed
-- 3 cups low-sodium chicken broth
-- ¼ cup fish sauce or soy sauce
-- 1 Tbsp sugar
-- 1 (2-inch) piece ginger, peeled and thinly sliced
-- 6 strips lime zest
-- 1 shallot, thinly sliced
-- 3 Thai bird chiles
-- 1½ lb skinless, boneless chicken thighs, cut into ½-inch strips
-- 4 oz shiitake mushrooms, stemmed and thinly sliced
-- 1 (13.5-oz) can unsweetened coconut milk
-- 1 large carrot, finely chopped
-- 3 Tbsp fresh lime juice
-- ¼ cup chopped cilantro, plus more for garnish
-- 2 Tbsp chopped Thai basil, plus more leaves for garnish
-- 1 green onion, thinly sliced
-- Chili oil sauce, for serving
-- Thinly sliced red and yellow bell peppers, for garnish (optional)
Directions:
-- Preheat slow cooker.
-- Using the side of a chef’s knife, lightly smash lemongrass. Combine lemongrass, broth, fish sauce, sugar, ginger, lime zest, shallot, chiles, chicken, and mushrooms in slow cooker. Cover and cook on HIGH 2½ hours (or LOW 5 hours) or until chicken is cooked through.
-- Add coconut milk and carrot; cook on HIGH 30 minutes longer (or on LOW 1 hour). Stir in lime juice, cilantro, basil and green onion. Top with cilantro and basil. Serve with chili oil sauce and garnish with bell peppers, if desired.
