Egg Green Curry Mangalore style | Egg Masala | Quick Egg Curry | Curry Recipes | Healthy Curry Recipes| Green Curry | Coriander and Mint Leaves Curry | Green Egg Curry recipe

INGREDIENTS :
7 eggs boiled
For the Masala;
4-5 garlic cloves
1-2 sliced onions
2 tbsp coconut (optional)
few fresh curry leaves
1 piece ginger
5-6 green chillis (more or less)
1 cup coriander leaves
¼ cup mint leaves
1 tsp fennel seeds
1 pinch of fenugreek seeds
1 tbsp coriander seeds
½ tsp pepper seeds
4-5 cloves, 2-star anise petals, 1 cinnamon
5-6 soaked cashew nuts
small ball of tamarind
For the Curry;
1 sliced onion
¼ tsp turmeric powder
salt to taste
METHOD :
Boil eggs, peel, and keep aside.
Heat one tbsp oil and slightly roast all ingredients until aromatic on low heat except cashew nuts and tamarind.
Into the Mixer Grinder, add the fried ingredients, cashew nuts, and a ball of tamarind and blend all of them together to make a smooth paste and keep aside.
Heat 1-2 tablespoons oil in a kadai over medium heat, add one sliced onion, and saute until browned. Add turmeric powder and mix well, Then add boiled, peeled eggs and fry slightly for a few seconds.
Add ground masala with a jar of washed water to adjust the consistency, add some salt to taste, and give a good mix. Cover and simmer the egg curry for 4-5 minutes.
After 4-5 minutes check and adjust accordingly and remove from heat.
