RECIPE: Phoebe Lapine’s Butter Bean and Tomato Salad
INGREDIENTS:
1/4 cup fresh lemon juice
3 Tbsp EVOO
1 tsp sea salt
1 tsp agave nectar
1/4 tsp freshly ground black pepper
1 cup cooked or canned butter beans (rinsed and drained if canned)
1 cup chopped heirloom tomatoes (about 1 large tomato)
1/2 cup roughly chopped fresh basil leaves
1/2 cup roughly chopped fresh parsley leaves
1/2 cup halved and pitted green olives
2 Tbsp brined capers, drained
3 Tbsp vegan ricotta cheese
Caraway or Chili Croutons (pg. 253 Phoebe Lapine’s cookbook) for serving (optional)
PREPARATION INSTRUCTIONS:
In a medium bowl, whisk together the lemon juice, EVOO, salt, agave and black pepper.
Add the butter beans, tomato, basil, parsley, olives and capers and toss gently to coat.
Serve topped with the ricotta and croutons (if using).
