A mini-series dedicated to all our DAIRY FREE friends out there! This week, we're tackling SOY MILK! I've learned that I'm not the world's biggest soy milk fan, but even with that said, this Banana Brown Sugar ice cream makes me a believer!
(Recipe is tweaked slightly from video for optimum taste/texture!)

Banana Brown Sugar Ice Cream w/ SOY MILK
2 ripe bananas, chopped
2/3 cup sugar
1/4 cup brown sugar
1 tbsp. corn syrup
1 tbsp. cinnamon
1 tsp. nutmeg
1 tsp. salt
3 cups soy milk
3 egg yolks
1 tsp. vanilla

1/2 cup walnuts, toasted/chopped
1/4 cup caramel sauce
1. In a medium saucepan, cook bananas, sugars, corn syrup, cinnamon, nutmeg and salt for 10-15 mins on low heat.
2. While that cooks, in another saucepan, warm the soy milk until scalding.
3. Temper in your egg yolks to your warm soy milk and cook on low, while constantly stirring gently, for about 3-5 mins. (The mixture will thicken slightly).
4. Pour your egg/milk mixture into your cooked banana/sugar mixture and stir to combine.
5. Pour the mixture into a blender and blend for 3 seconds (or a few pulses).
6. Pour mixture into a bowl and add in your vanilla.
7. Place your base over an ice bath to cool or in the fridge while you prep your mix-ins.
8. Churn your ice cream base using your ice cream machine's instructions.
9. With roughly 3 minutes left of churning, slowly spoon in your caramel sauce and walnut pieces.
10. Transfer to a freezer safe container and freeze overnight!
