🍲 Eggplant Soup Recipe
With these measurements, you will get a soup for approximately 4-5 people.
🛒 Ingredients
• Eggplant: 4-5 roasted eggplants (or 1 medium-sized jar of canned eggplant).
• Binder: 2 tablespoons butter + 2 tablespoons flour.
• Liquids: 250 ml milk + 250 ml broth + 250 ml water.
• Seasoning: Salt and black pepper.
👨🍳 Preparation
1. Prepare the Eggplants: If using fresh eggplants, roast them, peel off the skin, and chop them finely. If using canned eggplants, drain the water and cut them into smaller pieces by gently running a knife over them.
2. Prepare the Sauce: In a large pot, melt 2 tablespoons of butter. Add 2 tablespoons of flour and sauté over medium heat until the flour smells toasted (approximately 1-2 minutes). Attention: The flour should remain white and not turn brown.
3. Add the Liquids: To prevent lumping, slowly add the cold milk while stirring rapidly with a whisk. Then add the broth and water.
4. Combine with the Eggplant: Near boiling point, add the finely chopped roasted eggplant to the pot.
5. Cooking and Thickness: After the soup begins to boil, reduce the heat. Add salt and black pepper. Cook on low heat for an additional 5-7 minutes until the flavor of the eggplant transfers to the soup.
6. Smooth Texture (Optional): If you don't like chunky texture, you can blend the soup at this stage. It will become completely smooth and velvety.
