Pav Bhaji is one of the most popular and loved Indian street foods, originally from Mumbai, Maharashtra. It is a delicious combination of spiced mashed vegetable curry (bhaji) served with soft butter-toasted bread rolls called pav. This dish is famous for its rich flavor, buttery taste, and spicy aroma.
Ingredients:
For the Bhaji
3 medium potatoes (boiled and mashed)
1 cup cauliflower
½ cup green peas
2 carrots
7/8 French Beans (finely chopped)
1 capsicum (finely chopped)
2 tomatoes (finely chopped)
1 large onion (finely chopped)
1 tablespoon ginger-garlic paste
2 tablespoons butter
1 tablespoon oil
1½ tablepoons pav bhaji masala
½ teaspoon turmeric powder
1 teaspoon red chilli powder
1/2 tp coriander powder
1/2 tp cumin powder
Salt to taste
2 cups of water (as required)
Fresh coriander leaves (chopped)
1 lemon
For Toasting Pav
2 tablespoons butter
For Garnishing:
Finely chopped onions
Coriander leaves
Lemon wedges
A small cube of butter
Method
Step 1: Cook the Vegetables
First boil the potatoes, cauliflower, peas, and carrot in a pressure cooker until they become soft. Once cooked, mash them lightly and keep aside.
Step 2: Prepare the Masala Base
Heat oil and butter in a large pan or kadai on medium heat. Add the finely chopped onions and sauté until they become soft and light golden.
Add the ginger-garlic paste and cook for a minute until the raw smell disappears.
Step 3: Add Tomatoes and Capsicum
Now add the chopped tomatoes, capsicumand finely chopped french beans. Cook them until the tomatoes become soft and mushy.
Step 4: Add Spices
Add turmeric powder, red chilli powder, salt, and pav bhaji masala. Mix well and cook for 1–2 minutes so the spices release their aroma.
Step 5: Add Vegetables
Add the boiled and mashed vegetables to the pan. Using a potato masher, mash everything together while mixing with the masala.
Add water as needed to adjust the consistency and let the bhaji cook for about 5–7 minutes while stirring occasionally.
Step 6: Finish the Bhaji
Add butter, chopped coriander leaves, and a little lemon juice. Mix well and cook for another minute. Your pav bhaji is ready.
Step 7: Toast the Pav
Heat a tawa (flat pan) and add butter and sprinkle some pavbhaji masala . Slice the pav in the middle and place them on the pan. Toast them until they become golden and slightly crispy.
Serving
Serve the hot pav bhaji in a plate. Garnish with butter, chopped onions, coriander leaves, and lemon wedges. Serve with butter-toasted pav on the side.
Tips for Perfect Pav Bhaji
Use extra butter for authentic street-style flavor.
Mash the vegetables well to get a smooth texture.
Cook the bhaji a little longer to enhance the taste.
Add a small piece of butter while serving for extra richness.
