Recipe For GARLIC SAUCE
garlic cloves 5-6
egg white 1
lemon juice
pinch of salt
oil 200 ml
cold chilled water 2 tbsp
Put the peeled garlic cloves with salt and lemon juice in the blender. Blend on medium and scrape the sides down. Now add the egg white and blend on medium again. Then add half the oil in bit by bit. Try to pour slowly, steadily with a thin stream. Sauce should emulsify. (If it looks like it has split, then something has gone wrong, don't make it). Turn to a slow blend and add the rest of the lemon juice in it lowly too. Add the rest of the oil in the same manner. Add 1 or 2 tbsp of water to change the consistency into light and creamy. Tasty sauce is ready to serve.
