Why does chocolate turn white? Have you ever left a chocolate bar in the car on a hot summer day only to find your chocolate has melted and become discolored with a white film?
That’s called chocolate bloom, specifically fat bloom.
On the other side of the temperature gauge, if you freeze your chocolate —it could develop sugar bloom from the condensation.
This video talks about the chemistry involved in tempering chocolate and explains why does chocolate turn white when it is out of temper.
Proper tempering of the chocolate and proper chocolate storage will prevent chocolate from developing fat bloom and sugar bloom.
