INGREDIENTS:
Khube (clams)
For Masala Curry Paste
Oil – 2 to 3 tbsp
Garlic cloves – 15 to 20 (small sizes)
Ginger – 1 ½ inch
Chopped onion – 1 big size
Chopped tomato – 1 medium size
Grated coconut – 1 cup (½ coconut)
Fresh coriander leaves – ¼ cup
Turmeric powder – ½ tsp
Goan garam masala – 1 ½ tbsp
Water as per requirement
For gravy
Oil – 2 tbsp
Crushed garlic – 10 to 12
Chopped onion – 1 big size
Khube / clams
Ground masala paste
Chopped potato – 1 big size
Kokum – 2 to 3
Water as per requirement
Salt as per taste
Chopped fresh coriander leaves
METHOD/PREPARATION
Step 1:
Clean and thoroughly wash clams and keep aside.
Step 2: Masala Curry Paste
In a kadai, add oil once oil heats. add ginger garlic and saute till raw smell of ginger garlic goes away. Add chopped onion and saute till light golden in colour. add tomato and saute till it become soft. now add grated coconut and fresh coriander leaves and roast till its turn into light golden in colour or till aroma realise. Once colour started changing switch off the gas and allow it to cool down completely.
Once its cool down, transfer into grinder jar, add turmeric powder and Goan garam masala. Add water and make a semi fine paste.
Step 3: For Gravy
In a kadai, add oil once oil heats. add crushed garlic and chopped onion. Saute till translucent. add clams or khube and saute on low flame for 2 minutes or till water dries away. Add ground coconut paste and add water to adjust consistency of gravy. Add chopped potato and kokum. Mix well and cook for 10 minutes on medium to low flame. after 10 minutes add salt as per taste. Mix and cook for another 2 minutes. after 2 minutes switch off the gas and add finely chopped fresh coriander leaves. mix well and serve.
Serve and enjoy Goan Khube Masala Curry with Steamed Rice, Chapati or local Goan Bread.
