Looking for a simple, comforting, and budget-friendly dinner? This one-pan chicken and rice recipe is packed with flavor, incredibly juicy, and perfect for the whole family. Tender chicken thighs are cooked over caramelized onions and fluffy seasoned rice — all in one pan!
This is an easy weeknight meal that requires minimal prep and delivers maximum taste.
🛒 Ingredients:
2 onions
2 tablespoons vegetable oil
2 tablespoons butter
½ teaspoon baking soda
6 chicken thighs
Salt to taste
Paprika
Garlic powder
1 sweet bell pepper
1 cup rice
2 tablespoons tomato paste
Dried parsley
Fresh dill for garnish
👩🍳 Instructions:
Finely chop the onions.
Heat vegetable oil and butter in a large pan.
Add onions and cook until soft and translucent.
Stir in baking soda (this helps the onions caramelize faster).
Season chicken thighs with salt, paprika, and garlic powder.
Place chicken on top of the onions. Cover and cook for 10 minutes.
Flip the chicken, cover again, and cook another 10 minutes.
Dice the sweet bell pepper and add it to the onions.
Rinse rice under cold water and add it to the vegetables.
Fry everything together for 3 minutes.
Place the chicken on top of the rice.
Mix tomato paste with water and pour over the chicken.
Add salt and dried parsley.
Cover and simmer on low heat for 15 minutes.
Turn off the heat, cover with a towel, and let rest for 15 minutes.
Garnish with fresh dill and serve.
