Welcome to a slow and cozy autumn in Finland 🍂 I began the morning by oiling our wooden dining table, adding a soft tablecloth, flowers, and little autumn touches. Then I baked a vegan plum pie, cleaned the terrace before winter arrived, and made a warm dinner: baked chicken in a honey cranberry sauce, served with an arugula and pear salad, and creamy mashed potatoes. The next day, I prepared Hilma’s favorite food 🐾 and baked Finnish autumn granola to enjoy with yoghurt. Simple, heartfelt days of slow living in our Finnish home💛

🫐Vegan Plum Pie (Full of Plums)📌
🥧 Ingredients:📌
🫐 For the crust:📌
155 g all-purpose flour
1 tbsp sugar
¼ tsp salt
85 g cold vegan butter or coconut oil
3–4 tbsp ice-cold water
🍇 For the filling:📌
1 kg ripe plums, pitted and sliced in half
100 g brown sugar (adjust to the sweetness of plums)
2 tbsp cornstarch or potato starch
1 tsp vanilla extract
½ tsp cinnamon (optional but cozy!)
1 tbsp lemon juice
Pinch of salt
For topping before baking (optional):📌
Sprinkle brown sugar
🪵 Instructions📌
Make the crust:📌
In a large bowl, whisk flour, sugar, and salt. Cut in vegan butter until crumbly. Add cold water one tablespoon at a time until the dough holds together.
Wrap in parchment, and chill for 30 minutes.
Prepare the plum filling:📌
In another bowl, combine sliced plums with sugar, starch, vanilla, cinnamon, lemon juice, and salt. * Toss the gently until evenly coated. Let it sit for 10 minutes to draw out juices.
Assemble the pie:📌
Roll out the dough and line a 9-inch pie dish.
Prick the pie crust with a fork
Place the plum filling with juices in the dish.
Sprinkle sugar on top for sparkle.
Bake:📌
Bake in a preheated oven at 190 °C for 55 minutes, until golden brown and bubbling.
Let it cool for at least 1 hour before slicing; the filling thickens beautifully as it rests.
