3. Distillation- In the rum world, we have a somewhat unique set up when it comes to distillation. We run a combination continuous column and pot still at our distillery, but we operate it discontinuously. For the initial distillation, the rum wash goes through our stripping column, where it is distilled at an extremely low proof- usually around 100. This ensures we capture a lot of the heavier flavors and oils that are usually lost at higher distillation proofs. The initial distillate, or low wines as they are called, is then redistilled in our doubler to around 125 proof. This gives us a very rich, full flavored spirit. After distillation, the rum is allowed to rest in stainless steel, or in the case of our overproof rum, with the addition of toasted Ambruana wood staves, prior to being proofed down and bottled.
