BASIL GARLIC CHICKEN
AYAM DAUN SELASIH

Ingredients:
300gm boneless chicken
Instant basil garlic and chilli stir fry paste (store-bought)
1-1 ½ tbsp fish sauce
3 red cili padi
¼ tsp palm sugar
100ml coconut cream/thick coconut milk
200ml water fresh basil leaves
½ lime (juice)
Oil for cooking
Either coarsely pound or use a food processor - A
3 cloves of garlic
1 fresh red chilli
1-2 kaffir lime leaves
Method:
Heat up some oil in a wok over low flame. Saute the (A) until fragrant.
Then, add in the chicken and some basil leaves. Cook, 2 mins.
Now, add in the water, instant paste and fish sauce. I added about 100gm/4 heaped tsp.
You may add your desired amount. Keep it covered and continue to cook the chicken.
Now, add in the palm sugar and coconut cream.
Increase the flame to medium high and allow the gravy to thicken.
Once the gravy has thickened, check for seasoning. Add in the cili padi and more basil leaves.
Increase the flame to high, 1 minute and then turn off. Squeeze ½ lime. Ready to serve!
