Elawalu Roti // Sri Lankan Vegetable Roti
First day I landed in Colombo, we went to a street side stall that was selling these vegetable rotis and oh my god I fell in love!
I’m anyway a potato paglu, so this was right up my alley!
TOO freaking goooood. And the dough is flaky, the filling is 🌶️, so here’s the recipe:
For the dough:
250g flour
150g water
5 g oil
5 g salt
Form a dough with all the ingredients, knead for 5-7 mins and keep it aside for 30 mins. Divide it into 6 balls, flatten it and then cover it with oil and a cling wrap and keep aside for 5-6 hours.
For the filling:
1/2 tsp ground mustard seeds
6 potatoes, boiled
3-4 cloves of garlic
1/4 cup carrots, finely chopped
1/2 cup onions, finely chopped
1 red chilli
10/12 curry leaves
Turmeric,
1/2 tsp chilli powder
1 tsp curry powder (I’ve used Sri Lankan curry powder, but you can use any you have honestly)
Lots of Black pepper
Heat some coconut oil in a pan, add mustard seeds, curry leaves, chilli, onion and carrots and all the masalas.
Add a little water so it doesn’t burn but cook everything well, NOT overcooking.
Mix it together with salt and potato, coriander and keep aside.
Now that the dough has had time to relax in the oil, you will be able to spread it out thin!
Fold it over like I show in the video, add the filling and fold it into a triangle.
Cook on all sides with oil and enjoyyyyy
