*The Ultimate Hearty Beef Goulash Recipe*
Ingredients:
1 large onion, diced
2 small carrots (or 1 large), sliced
2 tbsp refined vegetable oil or pork fat
13 oz beef, cut into bite-sized pieces
1 tbsp sweet ground paprika
Pinch of ground black pepper
3 cups potatoes, diced small (approx. 1/2 inch cubes)
1 full teaspoon of salt (or to taste)
2 peppercorns
2 allspice berries
1/2 tsp dried garlic
1 tsp dried marjoram
1 bay leaf
Boiling water, as needed
3.5 oz tomato puree (or 1 large fresh tomato, finely chopped)
1 tsp dried dill
Instructions:
1. Sauté diced onion and carrots in fat until golden.
2. Add the chopped beef and brown until seared.
3. Stir in paprika and black pepper.
4. Pour in boiling water to almost cover the ingredients. Cover and braise until the beef is very tender (time varies).
5. Once beef is tender, add the diced potatoes, salt, peppercorns, allspice, dried garlic, marjoram, and bay leaf.
6. Pour in more hot water to cover the ingredients. Cover and simmer until the potatoes are completely cooked and beginning to fall apart.
7. Stir in the tomato puree and dried dill.
