Learn how to make vegan caviar lookalike. A quick breakfast or an indulgent canapé to brighten up your evening, made from buckwheat flour. In our recipe we serve our blini cream cheese frosting and mango pearls (caviar lookalike). Blinis are small yeasted pancakes of 2”-4” diameter, traditionally from Russia.
Traditionally served with smoked salmon and caviar.
Ingredients:
Granulated sugar - 10 ml
Dry Yeast - 7 g
Milk, lukewarm - 420 ml
Buckwheat flour - 120 g
All-purpose flour - 90 g
Salt - 2 ml
Unsalted butter, melted - 45 ml
Vegetable oil - 30 ml
Egg Yolks - 3 No.
Egg Whites - 2 No.
Blini Recipe:
Stir the sugar and yeast into the milk and let stand until foamy, approximately 5 minutes.
Whisk in the flours, salt, butter, oil and egg yolks. Beat until smooth.
Cover the batter and allow it to rise in a warm place until doubled, approximately 1 hour.
Beat the egg whites to stiff peaks, then fold them into the risen batter.
Lightly oil and preheat a large sauté pan. Drop 2 tablespoons (30 ml) of batter into the sauté pan, spacing the blini at least 1 inch (2.5 cm) apart.
Cook until the bottom of each blini is golden, approximately 1 minute. Turn the blini and cook an additional 30 seconds.
Remove from the pan and keep warm for service.
Mango Pearls (caviar) Recipe:
Ingredients:
Mango Puree - 120 g
Water - 50 ml
Sugar - 15 g (to taste)
Agar Agar - 2 g
Chilled Vegetable oil - 500 ml.
Recipe:
Bring mango puree, water & sugar to boil
Stir in agar agar until well incorporated.
Using a dropper, drop mango puree in chilled vegetable oil.
