1.500 kg de espaldilla de res.
1/2 cebolla blanca.
1 trozo de mejorana.
2 cucharadas de sal.
1 cabeza de ajos.
Chile serrano al gusto.
1 litro de agua.
60 g de chile guajillo.
50 g de chile pasilla.
2 dientes de ajo.
1 cucharadita de comino.
1/2 cucharadita de pimienta gorda.
4 a 5 clavos de olor.
