I make empanadas in different ways and with different fillings. In this version of my recipe, the taste of creamy potato filling inside the flaky pastry is just another level your taste buds will experience.
Potato Empanadas
Ingredients for the pastry:
1/2 cup warm water
1 tsp yeast powder
2 1/2 tbsp. dry milk powder
1/2 tsp salt
8 tbsp. of softened butter, unsalted
2 cups of all-purpose flour
Method:
Dissolve yeast and dry milk powder in warm water. Then add half of the flour to it and mix with a wooden spoon. Now, add salt and the rest of the flour and mix again. Add soft butter to it and start kneading it till you have a smooth dough. Cover it and let it stand for an hour.
Ingredients for the filling:
3 large-size potatoes
1/2 onion chopped
2 tbsp. oil
1/2 tsp paprika powder
1/4 tsp red chili flakes
1/4 tsp garlic powder
1/4 tsp all-spice powder (garam masala)
1/2 tsp cumin powder
Salt and black pepper to taste
Scallions chopped, about a handful
1/2 cup of feta cheese
1 egg for brushing the top,
Method:
Boil the potatoes with the skin on till tender. Cool, peel, and mash them.
Sauté onions in oil and add the spices to it. Add the onions mixture to the mashed potatoes and mix well. Now add chopped scallions and feta cheese, or any other cheese of your choice and mix again.
Roll the dough out on a flat surface. you don't need the dry flour because this dough will not stick to the surface. Roll the dough as thin as 1/8'' inch. Cut the dough out into the desired shapes and fill it with the potato mixture.
Whisk the egg and brush the tops of the filled empanadas. Sprinkle some salt on top. Bake at 380F for 30-33 minutes. Take out when the empanadas are nicely golden brown.
