Matar Paratha without onion and garlic is a delightful dish, especially suitable for those who avoid these ingredients for various reasons.
Here's a simple recipe for you:
Ingredients:
1 cup whole wheat flour (atta)
1/2 teaspoon ajwain
1 cup green peas (fresh or frozen)
1-2 green chilies, finely chopped
1 teaspoon ginger, grated (optional)
1/3 teaspoon cumin seeds
1/3 teaspoon garam masala
1/2 teaspoon coriander powder
1/3 teaspoon cumin powder
Salt to taste
Kasuri Methi
Amchoor Powder (optional)
Fresh coriander leaves, chopped
Ghee or oil for frying
Water for kneading dough
Instructions:
Prepare the Dough:
Take the whole wheat flour in a mixing bowl. Add a pinch of salt, crushed ajwain and water gradually to knead a soft dough. Keep it aside for about 15-20 minutes, covering it with a damp cloth or a lid.
Prepare the Filling:
While using frozen peas, thaw them.
Heat a teaspoon of oil in a pan. Add cumin seeds and let them splutter.
Add grated ginger and chopped green chilies. Sauté for a minute.
Add peas, mash the peas coarsely using a potato masher or fork.
Add all masala, and salt.
Cook for another 2-3 minutes.
Add a pinch or two of Amchoor Powder
Crush a little Kasuri methi and add
Add chopped coriander leaves and mix well.
Remove from heat and let it cool.
Make Parathas:
Divide the dough into equal-sized balls.
Roll out each ball into a small disc, place a spoonful of the prepared pea mixture in the center.
Bring the edges of the dough together and seal the filling inside. Flatten the stuffed dough ball gently.
Roll out the stuffed dough ball into a circle of desired thickness, dusting with flour if needed to prevent sticking.
Cook Parathas:
Heat a griddle or tawa over medium heat.
Place the rolled-out paratha on the hot griddle. Cook for a minute or so until bubbles start to appear.
Flip the paratha and spread a little ghee or oil on the cooked side.
Cook until golden brown spots appear on both sides.
Repeat the process for the remaining dough balls.
Serve:
Serve hot with yogurt, pickle, or any side dish of your choice.
