This record was a very long 2 month grind, riddled with RNG. Unfortunately the ruleset for this boss changed just after we completed our grind, but previously you were required to start the timer as soon as the encounter started rather than when the first green circle appears. The green circle appears on a randomly selected player which follows them and then teleports everyone inside to the underworld. This green circle is the real start to the fight, as deimos spawns only when you complete the underworld. However, this first selection occurs seemingly at random times, ranging from 2 seconds in to 7 seconds in. We explored many ways to manipulate the RNG to have the selection occur at the 2 second mark to lower our time, but in the end we did not find a method that worked 100% of the time, causing many, many wasted hours of simply starting the fight and /gg'ing. Regardless, here it is: Deimos done in 1 minute and 58 seconds.
