This setting got reset with the new Steam UI Beta Update.
Make sure that you are using the appropriate proton version for the game that you want to run. Usually it's experimental at the moment or the Arch AUR version such as I have.
It will list all your games as available to install, but not necessarily supported to run keep that in mind. Use the appropriate compatibility layer for you.
