Coorgi Style Pork a.k.a Pandi Curry a.k.a Kodava Style Pork, is an Iconic Pork dish from Coorg.
Kodava Style Pork is a rich, spicy, semi-dry pork preparation from the Coorg region of Karnataka. This dish is characterized by the use of Kachampuli which is a souring agent invented by the Coorgis. The other speciality of this dish is the Coorgi Black Masala Powder. This dark aromatic spicy masala powder is the secret behind the excellent Coorgi dry dishes prepared with Pork, Mutton or Chicken. Cooking pork for longer gives it a unique taste. It gets more flavor the following day. So make sure you spare some for the next day. Happy cooking !!

Ingredients

For the Coorgi Black Masala Powder :

4 tbsp coriander seeds
2 tbsp pepper corns
1 tsp black mustard seeds
½ tbsp cumin seeds (jeera)
½ tsp fennel seeds (saunf)
½ tsp fenugreek seed (methi seeds )
2 bay leaves
1 inch cinnamon stick
6 – 8 cloves

For the Preparation of Pork Masala :

½ kg Pork (preferably belly fat) washed & cut
1 large onion finely chopped
2 tbsp ginger-garlic finely chopped
3 green chillies finely chopped
3 sprigs of curry leaves
2 tbsp coriander leaves finely chopped
1 tsp turmeric powder
1 tsp salt (or as per taste)
2 ½ tsp black masala powder
300 ml water
¼ tsp Kochampuli (Garcinia Cambogia) - the link to purchase is given below


Note :
The Black Masala Powder is prepared for the use of 1 Kg Pork.
In this video, I have made ½ Kg Pork, so I have used only 2 ½ tbsp. of this Black Masala Powder, the remaining powder I have kept for my future use.
