Maswadi Rassa (also spelled Masvadi Rassa or Masvadi Vadi) is a traditional, flavorful, and time-intensive Maharashtrian delicacy. It consists of two parts: the Maswadi (a savory gram flour roll stuffed with a dry, spicy filling) and the Rassa (a thin, spicy, and coconut-based gravy) it is served with
Ingredients:
for dough and stuffing:
4 tsp Poppy seeds
15 Garlic petals
2 tsp kala masala
1 tsp garam masala
1 tsp cumin powder
1 tsp coriander powder
2 tsp salt
1 tsp red chilli powder
1.5 cup Besan
1/2 cup Wheat flour
1 cup Grated coconut
1/4 cup Sesame seeds
1-2 tsp Turmeric
Coriander leaves
Stuffing Method:
Roast & Grind: Separately dry roast the coconut, sesame seeds, and poppy seeds until fragrant and golden.
Combine : In a big bowl combine the roasted ingredients garlic, coriander leaves and all the powdered spices ( coriander powder, cumin powder, garam masala , kala masala Salt) It should be grainy, not a smooth paste. Set aside.
The Besan Cover (Wadi)
In a plate add Besan and wheat flour and add all spices turmeric, red chili powder, salt ,oil, and add little water as needed to make soft dough
Take small portion and roll evenly into thin circles
Spread the stuffing (masala) evenly over it
Lift the sheet/wrap from one end and roll the besan layer tightly, like a jelly roll or Swiss roll, pressing gently to seal the filling inside. Seal the seam and ends with your fingers.
cut the roll into small pieces
in steamer cook it for 15mins
In Kadhai In hot oil add curry leaves , sesame seeds Sprinkle some kala masala and little bit of stuffed masala and shallow fry all wadies
Spicy Curry :
To make curry
Curry leaves
chopped onion
ginger garlic paste,
coconut powder,
3tsp stuffing masala,
kala masala,
Garam masala
Salt
In pan in hot oil add chopped onions
Add chopped ginger garlic curry leaves
Add stuffing masala roasted coconut powder
add all spices kala masala red chili powder garam masala and add water and cook it for 4-5 mins on low flames
Serve the hot rassa in a bowl alongside the cool Maswadis (vadi pieces).
