Do you find it a challenge some days to get enough protein in to keep you from having that mid-day CRASH??!! Well, look no further. Today I'm bringing you 3 easy, delicious, protein packed, low carb meals that you can be eating in less than 5 minutes!
Come along with me today as I cook for one, just me! I keep my meals pretty simple, especially when cooking for one. You're important enough to cook delicious food for yourself, just like you do for others!
HIGH PROTEIN COTTAGE CHEESE EGG BOWL
INGREDIENTS
• 2 large eggs
• 2 tbsp low fat (2% milkfat) cottage cheese
• 10 turkey pepperoni slices, cut into small pieces (I used grilled chicken instead)
• Green onion, sliced
• Salt & pepper to taste
• Shredded cheese
INSTRUCTIONS
1. In a small microwave safe bowl, whisk together the eggs and cottage cheese until well combined. Then stir in the pepperoni & green onion.
2. Microwave on high for 1 minute and 15 seconds. Remove the bowl from the microwave and stir the egg mixture.
3. Add salt & pepper to taste, and top with shredded cheese.
4. Microwave an additional 45 seconds. If the eggs still aren’t fully set, continue to cook in 15 second intervals until it’s done. Let it cool for a minute, then enjoy!
HIGH PROTEIN CHICKEN & BROCCOLI BOWL
INGREDIENTS
• ¾ cup fresh broccoli chopped into small pieces
• ½ cup pre-cooked chicken, shredded or cut into bite size piece
• ½ cup low fat (2% milkfat) cottage cheese
• ½ tsp garlic powder
• ½ tsp paprika
• Shredded cheese
• ¼ cup crushed pork rinds
• Salt & pepper to taste
INSTRUCTIONS
1. In a food processor, pulse the cottage cheese with the garlic powder & paprika until smooth.
2. Tear the chicken and the broccoli into small pieces.
3. In a small microwavable bowl, add the chopped broccoli. Cover with a microwavable cover and steam for one minute. If not tender, heat in 15 second intervals until desired doneness is reached.
4. Season with salt & pepper to taste.
5. Combine the cottage cheese mixture with the chicken & broccoli. Sprinkle shredded cheese over the top.
6. Heat in the microwave, uncovered, for 1 minute and 30 seconds. When done the cheese should be melted and the inside should be thoroughly heated. Heat in 15 second intervals if needed.
7. Top with crushed pork rinds as desired.
COTTAGE CHEESE PIZZA BOWL
INGREDIENTS
• ¼ cup white mushrooms, chopped
• ¼ cup bell pepper, chopped
• 12 slices turkey pepperoni
• ½ cup low fat (2% milkfat) cottage cheese
• 2 tbsp marinara sauce
• 1 pinch Italian seasoning
• Shredded mozzarella cheese
• Grated parmesan cheese
INSTRUCTIONS
1. Chop veggies and pepperoni into smaller pieces.
2. In a small microwavable bowl, add cottage cheese, marinara sauce, vegetables, pepperoni, & Italian seasoning. Stir until well combined.
3. Place in the microwave and heat on high for 1 minute. Remove and stir. Sprinkle the top with shredded mozzarella & parmesan cheese. Heat for another 30 seconds to 1 minute until cheese is melted and mixture is heated thoroughly.
