Ingredients:
1 Turkey (11 pounds whole turkey, fresh or thawed, non-self basting)

CAJUN TURKEY SEASONING MIX:
1/2 cup kosher salt
1/2 cup garlic pepper
1/2 cup ground white pepper
2 teaspoons cayenne pepper
1 teaspoon onion powder

LIQUID MARINADE:
1 pound unsalted butter (16 ounces)
3 tablespoons salt
3 tablespoons ground black pepper
1 tablespoon ground white pepper
2 tablespoons cayenne pepper
2 tablespoons paprika
Aluminum cooking tray

Directions:
Clean turkey remove any extra pieces that may be in the chicken cavity
You can brine the turkey if you choose but it is not necessary but recommended.
After Brining Turkey overnight rinse the turkey well with cold water. Drain and completely pat dry both the inside and outside of the turkey with paper towels.
For Seasoning Mix: Combine kosher salt, peppers and onion powder in one bowl.
Place turkey in a large pan and rub the inside and outside of the turkey with 1/2 of the Cajun Turkey Seasoning Mix.
Cover the pan and refrigerate turkey overnight.
For Marinade: Over very low heat, melt butter and stir in salt, black pepper, white pepper and cayenne pepper in a small saucepan. Stir until well blended. Allow mixture to cool.
Pour half marinade into the turkey cavity and under the turkey skin, covering all the thick areas such as the breast and legs.
Set up the grill for indirect grilling, place a large aluminum cooking drip pan in the center, pour the rest of the marinade into pan.
Preheat the grill to medium 325 F.
Place the turkey, back side down, on the hot grate over the drip pan and cover the grill.
Grill the turkey 3 1/2 to 4 hours, figuring on 20 minutes per pound.
Baste the turkey every 20 minutes using the dripping s and marinade form the aluminum pan
Transfer the turkey to a platter or carving board
Immediately sprinkle turkey with the remaining Cajun Turkey Seasoning Mix.
Cover it loosely with aluminum foil.
Allow the turkey to sit for 20 minutes before carving.
Slice the turkey and serve.
