For Amla Murabba
Ingredients:
1 kg amla (Indian gooseberries) 800 gms sugar 1/4 tsp cardamom (elaichi) powder 1 tbs lemon juice
1/4 tablespoons mix of salt and ginger powder
Method
amla murabba Wash the amlas thoroughly.
Boil water in a pan, add the amlas and boil for 5 minutes over a high flame. Drain and keep aside.
Once cooled,Prick them with a fork at regular intervals
Take a steel or non stick pan with heavy bottom
Add the amlas ,cover it with a lid and let it sit for about an hour
Mix Amala with sugar slowly and add 2 spoons of water .
Don’t add more water otherwise it will take longer to reduce the water content .
cook over a slow flame for about 40 -45 minutes or until the amlas are soft.
Add ,cardamom powder,lemon,ginger/salt mixture .
Cook until the Amala are tender and juice.Another way boil the sugar syrup reduces to a 2 to 3 string consistency.
Allow the amla murraba to cool completely.
Bottle the amla murraba in a sterilised glass jar .
