Recipe:
Ingredients:
10-12 green chili peppers, sliced
200 grams Bhutanese cheese (or substitute with feta or paneer)
1 onion, thinly sliced
2 tomatoes, diced
2 cloves garlic, minced
1-inch ginger, minced
1 tablespoon vegetable oil
Salt to taste
Water, as needed
Instructions:
Preparation:
Slice the green chili peppers and soak them in cold water for about 30 minutes to reduce the heat.
Cut the Bhutanese cheese into small cubes.
Cooking:
In a pan, heat the vegetable oil over medium heat.
Add the minced garlic and ginger, and sauté for a minute until fragrant.
Adding Vegetables:
Add the sliced onions and cook until they become translucent.
Stir in the diced tomatoes and continue to cook for another 2-3 minutes.
Adding Peppers and Cheese:
Drain the soaked green chili peppers and add them to the pan.
Add the cubes of Bhutanese cheese to the pan.
Cooking Ema Datshi:
Stir well to combine all the ingredients.
Add a little water if needed to achieve the desired consistency.
Season with salt to taste.
Simmering:
Reduce the heat to low and let the mixture simmer for about 10-15 minutes, stirring occasionally, until the cheese is melted and the flavors are well combined.
Final Touch:
Once cooked, remove from heat and let it rest for a few minutes.
Serve hot with red rice or steamed white rice.
