TURNIP GREENS AND SMOKED TURKEY LEG
4 bunches of TURNIP GREENS, washed and stems removed
2 tablespoons OLIVE OIL OR ANY COOKING OIL
2 SHALLOTS, chopped
2 teaspoons BACON GREASE
2 teaspoons GARLIC, chopped
1 teaspoon SALT
Juice of 1 LEMON
Fresh ground PEPPER
Sprinkle of RED PEPPER FLAKES, optional
1 SMOKED TURKEY LEG OR WING, HAM HOCK, OR BACON.
Wash greens well and pat dry. Fold the leaves over and cut down the edge of the fold to remove the central vein and stems. Chop leaves into thick slices. Add Oil and bacon grease to a large pot on medium heat and let melt. Add shallots and saute' about 3 minutes or until softened. Add Red pepper flakes, garlic and turkey leg. Stir and add greens, salt and just enough water to cover the greens. Cook for 1 hour. Remove the turkey leg and debone, Shred or chop the turkey meat and add back to the pot of greens. They are ready to serve with a piece of hot buttered cornbread.
