Fermented bananas:
Another idea to add prebiotic and probiotic rich foods into your diet. Fermented bananas are a great source of enzymes, potassium, the best solution for people on a low carb, Ketogenic or sugar free diet. By fermenting them you add beneficial bacteria. The good bacteria in the cultures feed on all the sugars and removes them, leaving a sugar-free version of your bananas.
Ingredient:
• 2 bananas
• 2 cups Water (chlorine free)
• 1 pinch of sea salt
• 1 tbsp sugar to feed bacteria (if you are serious concern about sugar just leave out)
• 1-2 probiotic capsule
Instruction:
1. Slice the bananas in 1 cm of thickness, then place them into the jar
2. Dissolve sugar, salt and the powder of probiotic capsule in water
3. Add water mix into the jar, leaving about 1-1.5 inches of head space for expansion and rising during fermentation.
4. Cover with cap loosely.
5. Set the jar in the bigger container to catch overflow if your jar not big enough
6. Let it ferment in a warm, dry, & dark place (60-75°F is preferred) for 2-3 days. The longer you let them ferment the more tart they will be, so find the sweet spot you like by tasting them.
7. Burp & Shake the jar every day to protect the mold and release the gas.
8. Day 2 Done!!! At 70F, It should be very fizzy and the liquid should appear cloudy, put in refrigerator to slow fermentation.
9. It is ready to use in your recipes. They taste tart, fizzy, tangy and lightly sweet and look mushy but they still held together as a banana slice, ready to top on your pancake, smoothie, yogurt or ice cream for a lovely healthy snack that is rich in probiotic & prebiotic, it may not look nice at present but you know it is good for your gut health.
