Biriyani masala ingredients
3 dried red chillies
2 Bay leaves
1.5 tbsp coriander seeds
1/2 tbsp cumin seeds
1/2 tbsp mace
1 stick cinnamon
1/2 tsp cloves
1 star anise
1/2 tbsp pepper
5 cardamom
1/2 tsp fennel seeds

Garam masala ingredients
1/2 tbsp cumin seeds
1/2 tbsp fennel seeds
2 tsp coriander seeds
3/4 tsp cardamom
2 tsp pepper
2 sticks cinnamon
1/2 tsp cloves
1 tsp mace
1 star anise
1 bay leaf

Paruppu podi
5 glove garlic
1/4 cup toor dal
1/8 tsp cumin seeds
1 tsp channa dal
1/8 tsp black pepper
2 red chillies
2 spring curry leaves
1 tsp bengal gram
1/8 tsp hing
1/8 tsp salt

Rasam powder
1/4 cup corriander seeds
1 tbsp toor dal
2 tsp channa dal
2 tsp cumin seeds
1/2 tbsp pepper corn
3 red chillies
1/8 Fenugreek seeds
1/4 tsp hing
Handful of curry leaves
