EXP 3: Determination of Acid Value of Fat/Oil
In this video, I determine the acid value of a fat/oil sample using a titration method. The acid value indicates the amount of free fatty acids present in the oil, which helps evaluate its quality and degree of rancidity.
In this experiment, I show:
• Preparation of the oil sample
• Addition of phenolphthalein indicator
• Titration with standard KOH solution
• Calculation of the acid value
The acid value is expressed as mg of KOH required to neutralize the free fatty acids present in 1 g of fat or oil. A higher acid value indicates deterioration or rancidity of the oil.
