WATER KEDIR RECIPE
Ingredients:
1/2 gallon clean and sterile glass jug
1/4 cup water kefir grains
1/4 cup organic sugar
1/2 to 1 cup fresh berries or fruit
1-2 dates, depending on size
A pinch of pink Himalayan salt or mineral drops
Filtered water
Juice (grape or any other flavor)
Instructions:
1. Make sure the glass jug is clean and sterile before starting.
2. Add the water kefir grains, organic sugar, dates, and pink Himalayan salt or mineral drops to the glass jug. The salt/mineral drops are completely optional and something I don’t even ad because of our warm climate in the Tampa Bay Area of Florida and I have had issues of OVER-fermentation which led to a higher alcohol content!
3. Fill the jug with filtered water, leaving some room at the top for expansion.
4. Cover the jug with a non-metallic lid or a cloth and secure it with a rubber band.
5. Place the jug on the counter at room temperature for 24- 48 hours.
6. Repeat the process for a new batch of water kefir.
7. Place the water kefir that has already been fermenting for 48 hours into a new glass container and add some juice to it, as well as fruit if so desired. Grape is my favorite but you can add any flavor. Add the amount of juice you want for the desired flavor.
8. Let the water kefir with juice sit at room temperature for another 24 hours to allow it to continue fermenting and become fizzy. At this point you want a plastic lid sealed on tight to create pressure for added fizziness.
9. Immediately after 24 hours, put your kefir into jars with air-tight lids to create pressure and cause your drinks to fizz and give them a “soda like” texture. This will also make the drink end up tasting like a fizzy soda pop!
10. Put the sealed bottles into the fridge immediately. Room temperature drinks can explode.
Note: You can reuse the water kefir grains to make more water kefir by repeating the process. The longer you leave the water kefir to ferment, the more tart and sour it will become. Adjust the amount of sugar and fruit to your desired level of sweetness.

Water kefir can be flavored with fruit or other natural flavorings to create a variety of flavors, and it is often enjoyed as a health-promoting probiotic beverage due to its beneficial bacteria and yeast content. It is also a popular alternative to soda or other sugary drinks.
The probiotics found in water kefir can help improve gut health by promoting the growth of beneficial bacteria in the gut and reducing the growth of harmful bacteria. Water kefir can also boost your immune system, improve digestion and reduce bloating, and reduce inflammation.
Water kefir also boosts immune function: The beneficial bacteria and yeast in water kefir can help strengthen the immune system by supporting the gut microbiome, which plays an important role in immune function.
It may improve digestion: Drinking water kefir regularly may help improve digestion by promoting the growth of beneficial bacteria in the gut and aiding in the breakdown of food.
