Labour intensive but absolutely "soft and tender" dukunu is one of Belize's many delicious culinary treats. Usually vegeterian, dukunu at times, can come stuffed with chicken (my absolute favorite).
Dukunu is not made of the traditional masa, as in tamales. Instead it is made from roasted and ground corn kernals steamed in corn husks. How could this not be a favorite of the ancient Mayans of Belize?
In San Pedro Town, you will find street vendors selling the tasty treat, but there is one vendor in particular that has caught everyone's attention.
