Dale Talde's pretzel dumplings are one of the most popular things on the menu at his eponymous Talde restaurant in Jersey City, and they’re actually quite easy to make. The secret is just boiling them with a little baking soda. In the latest episode of Mad Genius Tips on the Road he shows our host Ethan Fixell all the details.
He fills the dumplings and drops them in boiling water with baking soda. Give them a little bath for about three to four minutes. Brush on some egg and butter, and then pan fry them. Serve with tahini and Chinese mustard...delicious.
