Coconut Prawn Pulao is a tasty and fragrant #PulaoRecipe. In this #CoconutPrawnPulao, slender grains of basmati rice is cooked in coconut milk, along with aromatic spices and peeled shrimp. Coconut Prawn Pulao Recipe:

Basmati Rice - 2 cups
Prawns (peeled) - ½ cup
Ghee - 1 tbsp
Cinnamon - 2-inch piece
Cloves - 5 nos
Cardamom - 4 nos
Black Peppercorns - 10 nos
Onion (sliced) - 1 cup
Tomato (chopped) - ½ cup
Ginger Garlic Paste - 2 tsp
Green Chilli (slit) - 2 nos
Coconut Milk - ½ cup
Salt - 2 tsp
Sugar - 1 tsp
Lemon Juice - 1 tsp
Cashew Nuts - 10 pieces
Water - 3 Cups

Cooking Instructions:

1. Wash the basmati rice in water and soak it in water for at least 20 minutes.

2. Soak the cashews in water.

3. In a pot, heat the ghee and add cinnamon, cloves, peppercorns and cardamom. Add the onions and green chillies. Cook until the onion turns translucent.

4. Add the ginger-garlic paste. Saute for 1 minute.

5. To this, add the peeled shrimp and chopped tomato.

6. Add the coconut milk and 3 cups of water. Add the salt and sugar.

7. Once it comes to a boil, add the lemon juice and the soaked rice.

8. Cover with a lid and cook on low flame for 20 minutes.

9. After 20 minutes, add the soaked cashew nuts and gently mix the rice.

Cooking Tips:

1. Lemon helps to keep the rice separated, and not stick to each other.

2. While cooking any pulao, sugar helps to balance out the flavours.
