Chori bhagi / bhaaji (a.k.a spinach, or Jamaican Callaloo elsewhere in the Caribbean) makes for a healthy, vegetarian dish. Perfect with rice & dhal, roti, provisions or even fried/ coconut bake. Made with fresh seasonings and slow cooked in a creamy coconut milk and salted butter this dish will not disappoint!
INGREDIENTS:
1 to 2 bundles Chori bhagi / spinach / Jamaican callaloo - young leaves & stems are the best!! (wash thoroughly and chop leaves & thin stems into small pieces.)
1 potspoon Olive Oil (or vegatable oil)
1 onion - diced
8 cloves garlic - diced
4 pimento peppers - finely diced (hot pepper is optional)
1 tomato- finely diced
1/2 tin coconut milk
2 TBSP cooking magarine (FRENCH MAID or GOLDEN RAY)
Salt (to taste)
1) Add 1 potspoon olive oil to a large cast iron pot (over medium or medium high heatheat)
2) Add chopped onion and garlic (saute 1 to 2 mins till soft & fragrant, & onions are translucent.
3) Add pimento peppers & chopped tomatoes.
4) Add 1/2 tsp salt & saute on medium to high heat...depends pot...and heat till pimentoes and tomato are tender.
5) Add washed & chopped bhagi.
6) Stir to combine everything.
7) Cover & steam on LOW to MEDIUM heat for 15 mins (keep checking on it and keep stirring to ensure it is not burning or sticking at bottom).
8) Add coconut milk & stir
9) Add French Maid butter & stir thoroughly
10) Cover & let steam / cook on LOW to MEDIUM heat for about 10 -15 mins (keep checking on it!!!!)
11) Taste for salt
12) Ready when leaves soft & tender and liquid has dried down.
