EASY BLACK BEAN RECIPES!! || HOW TO COOK BLACK BEANS IN YOUR INSTANT POT

Cuban Black Beans:
-1 tablespoon olive oil
-1 onion, diced
-1 cup baby carrots, diced
-1 tablespoon garlic
-1 green bell pepper, diced
-1 tomato, chopped
-1 teaspoon cumin
-1 teaspoon paprika
-Salt and pepper, to taste
-1-2 cups tomato juice
-2 cups cooked black beans (or 1 can)
-1 cup uncooked rice

Begin cooking your rice using desired method.

In a large pan, heat olive oil. Add onions, carrots, garlic, and bell pepper and cook for 5 minutes.

Add cumin, paprika, salt/pepper, and tomato, and cook for another 1-2 minutes.

Add black beans and ½ cup tomato juice, then stir and let simmer for 10 minutes. Add more tomato juice as needed if the mixture looks too dry.

Divide into 4 bowls with rice and serve with favorite toppings.

Bean and corn quesadillas

-1 tablespoon olive oil
-1 onion, diced
-1 cup frozen corn
-2 cups black beans
-1/4 cup salsa
-1/2 teaspoon cumin
-1/2 teaspoon chili powder
-Salt and pepper, to taste
-1 cup shredded cheddar
-4 large flour tortillas

Heat olive oil in a large pan and add onion, cooking 1-2 minutes. Add frozen corn, black beans, salsa, cumin, chili powder, and salt/pepper. Cook for 2-3 minutes until hot.

Grease another large pan and turn to medium heat. Scoop a ½ cup of the bean mixture onto one side of a large tortilla and top with ¼ cup cheese. Fold the top of the tortilla over and gently place on the heated pan.

Cook for 1-2 minutes on each side until browned.
