#FoodingAround with Jenny Morris - How to make her chicken ala king with a twist. She joins the #HeartBreakfast team every Thursday morning after 8 am and takes you into her kitchen via live stream and on-air.
INGREDIENTs
1 kg chicken pieces
○ 1 teaspoon chicken vegetable or mushroom stock
○ 2 teaspoons ground cumin
○ ½ tsp ground black pepper
○ 2 tablespoons olive oil
○ 50g butter
○ 400g mushrooms, cut into chunks
○ 1 large red pepper cut into chunks
○ 4 garlic cloves, finely chopped
○ 3 sprigs of thyme
○ 1 can coconut milk
○ 1/2 cup cream
○ zest of 1 lemon
○ 2 spring onions with tops chopped
Method:
1. Place the chicken pieces into a bowl and drizzle with olive oil, season with the stock powder, cumin, and pepper.
In a large saucepan heat the olive oil and place the chicken skin side downs, cook till golden brown, turn and cook for a further 2 minutes.
2. Remove the chicken and throw off any fat in the pan. In the same pan add the butter, mushrooms, and peppers and cook for 3 minutes, add the garlic, and when it becomes fragrant season with salt and pepper.
3. Return the chicken to the saucepan and add the thyme, coconut milk, and cream, simmer gently for about 10 minutes or until the chicken is cooked through.
4. Stir in the lemon zest and spring onions and serve.
Delicious on mash or buttery noodles
