Simple ingredients, no egg, and definitely not dry.

🧺 Ingredients (1 serving)
• Egg noodles 鸡蛋面 — 130 g
• Red tomato 番茄 — 200 g, diced 🍅
• White cabbage 卷心菜 / 包菜 — 1 handful, sliced 🥬
• Bean sprouts 豆芽 — 1 handful 🌱
• Garlic 蒜 — ½ tbsp, minced 🧄
• Red onion / shallots 红葱头 — 1–2 tbsp, diced 🧅
• Large scallion 大葱
• white part for cooking
• green part for garnish
• Light soy sauce (kecap asin) 生抽(hard to find — bought on Taobao 🛒)
• Sweet soy sauce (kecap manis) 印尼甜酱油(also bought on Taobao 🛍️)
• Chicken seasoning 鸡精
• Oil & water
• Fried shallots 炸红葱头(brought from home 🧳)
