Carrot Hot Dogs and Kimchi are glorious together! 🌭😋💕 Do you guys also like this combo? Who can relate? 🙋‍♀️🙋‍♂️

VEGAN CARROT HOT DOGS ✨

4-6 medium-sized carrots
1/2 cup vegetable stock
2 tbsp. soy sauce
1 tbsp. rice wine vinegar
1 tbsp. smoked paprika
1 tbsp. onion powder
1 tbsp. garlic powder
1 tbsp. apple cider vinegar
2 tbsp. maple syrup
1 tsp black pepper


Method

For the Marinade:
Combine the vegetable stock, soy sauce, apple cider vinegar, rice wine vinegar, maple syrup, garlic powder, smoked paprika, garlic powder and black pepper. Mix them well and set aside.

Boil the carrots for 15-20 minutes or until fork tender. Transfer in a bowl and pour cold water with ice and let it sit there for 2 minutes. Place them in a silicone reusable bag or in an airtight container and pour the marinade over the carrots. Make sure that they are fully covered by the marinade. Keep them in the fridge overnight.

The next day, cook the carrot dogs on a cast iron skillet. Brush the marinade as you're cooking each side for 2-3 minutes. Pour the remaining marinade and cook for another 2 minutes.

Place carrots in hot dog rolls and add your favorite toppings. You can go for the classic ketchup and mustard combo or spice it up a bit by topping it with kimchi and relish pickles. Serve immediately and enjoy!
